Chef Zachary Carl Janssen was born and raised in the Midwest. His passion for cooking led him to France in 2002 where he studied classical French culinary skills under Chef Alain Rousseau. Later he returned to France and studied baking and pastry. After his return to the United States he visited the Pacific Northwest and fell in the love with the area, and the prolific abundance of fresh and local ingredients.
Zach ventured off on his own and relocated to the Pacific Northwest leaving his family behind in the Midwest. He supported himself as a young man as he worked alongside several great chefs including Chef EJ (Ed Tipple) where he was given great opportunities to prove his talents and worked his way up the kitchen ranks.
Chef Zach’s approach is simple and straight forward; he supports the concept of "Farm to Fork" and to support local farmers. His goal at Bonneville Hot Springs is to make the Pacific Crest Dining room a flavor destination for everyone; young and old, locals and world travelers.
Zach is very active and keeps his days off filled with gardening, foraging, hiking, taking road trips to the beach, and fishing. Zach enjoys planning and going to Alaska
