Executive Chef Shane Eagan’s culinary career spans nearly 16 years.  He has perfected his art thru many great experiences with restaurants in Colorado, the Northwest, and the Bahamas.  Having worked with legendary chef, Tim Marron, he knows what fine cuisine and attention to taste, quality and the small details, are all about.  In Aspen, Colorado he helped Jimmy Nadell with Conundrum Catering as a private chef.  He then started his own business doing catering and private parties throughout Colorado.  His business ventures then led him to the Bahamas where he ran a small Bakery that was well known around the islands.  When he returned to this country he spent time with Chef Ron Jackson at the Historic Hotel Colorado and brought a unique blend of flavors and aromas to the menu.  Now living in the beautiful wine country, he is eager to pair local wines with a captivating menu to entice the palate, and raise the level of food and service standards as high as possible, creating an unforgettable experience for our guests.
